Keep it sealed, cool and out of direct sun. An airtight jar in a cupboard is enough through winter; in summer the fridge holds it longer and costs it nothing.

Nothing is added to any of it, so it behaves like the fruit it came from — honey may crystallise, and apricots stay brown because they are unsulphured.
